Aloo Posto Recipe

A simple and traditional Bengali Aloo Posto Recipe made with potatoes, poppy seed paste, green chilies, and mustard oil. Perfect with steamed rice and dal.

Ingredients
  

  • 3 medium potatoes cubed
  • 4 tablespoons poppy seeds
  • 2 to 3 green chilies
  • 2 tablespoons mustard oil
  • 1/2 teaspoon nigella seeds / kalonji
  • Salt as needed
  • 1/4 teaspoon turmeric powder optional
  • 1/2 cup water as needed
  • 1 teaspoon mustard oil for finishing

Method
 

  1. Soak poppy seeds in warm water for 20 to 30 minutes.
  2. Grind soaked poppy seeds with green chilies and a little water to make a smooth paste.
  3. Heat mustard oil in a pan and add nigella seeds.
  4. Add potato cubes, salt, and turmeric powder if using. Mix well.
  5. Cover and cook for 5 to 7 minutes.
  6. Add the poppy seed paste and mix gently.
  7. Add water, cover, and cook until the potatoes become soft.
  8. Add slit green chilies and a little mustard oil on top.
  9. Mix gently and serve hot with steamed rice and dal.

Notes

Use mustard oil for authentic flavor. Soak the poppy seeds before grinding to get a smoother paste. Keep the dish thick and creamy, not watery.
