Method
- Heat oil in a pan and add cumin seeds.
- Add onion and green chilies. Cook until light golden.
- Add ginger-garlic paste and cook for 1 minute.
- Add tomato, turmeric, coriander powder, cumin powder, red chili powder, and salt. Cook until the tomato becomes soft.
- Add potatoes and cauliflower. Mix well.
- Cover and cook on low to medium heat for 15 to 20 minutes, stirring in between.
- Sprinkle a little water if needed.
- Add garam masala and coriander leaves. Mix gently.
- Serve hot with roti, paratha, dal, or rice.
Notes
Cut the potatoes small so they cook evenly. Do not add too much water, as this is a dry sabzi. Stir gently to keep the cauliflower pieces from breaking.
